Braised Pork Chops with Lemon Garlic Red Potatoes



A delightful dish featuring tender braised pork chops served with flavorful lemon and garlic-infused red potatoes.

Ingredients:

  • 4 pork chops
  • 1 lb red potatoes, quartered
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Preheat the oven to 350F 175C

Season pork chops with salt, pepper, and dried thyme

In a large ovenproof skillet, heat olive oil over medium-high heat

Brown pork chops on both sides, then remove from the skillet

In the same skillet, add minced garlic and cook until fragrant

Add quartered red potatoes, lemon slices, and chicken broth

Stir to combine

Place browned pork chops on top of the potato mixture

Transfer the skillet to the preheated oven and bake for 25-30 minutes or until pork is cooked through

Garnish with fresh parsley before serving
