The Little Mermaid Cupcakes



Make these beautiful Little Mermaid cupcakes that are based on the world that Ariel and her friends live in underwater. They're great for a mermaid party or just as a sweet treat for Disney fans because they have many colorful layers and edible mermaid tail decorations.

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • Blue food coloring
  • Green food coloring
  • Purple food coloring
  • Cupcake liners
  • Edible mermaid tail decorations

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with cupcake liners

In a bowl, whisk together the flour, baking powder, and salt

Set aside

In another bowl, cream the softened butter and sugar together until light and fluffy

Add the eggs one at a time, beating well after each addition

Stir in the vanilla extract

Gradually mix in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients

Mix until just combined

Divide the batter into three separate bowls

Add blue food coloring to one, green to another, and purple to the third bowl

Mix each until the desired color is achieved

Spoon a little of each colored batter into each cupcake liner, creating a layered effect

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely

Once the cupcakes are cool, decorate the tops with edible mermaid tail decorations
