Vegan Churro Scones



These scones are a great vegan take on traditional churros. They are soft on the inside, crunchy on the outside, and full of chocolate chips. This is a great sweet breakfast or snack.

Ingredients:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, cold and cubed
  • 1/2 cup non-dairy milk
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips
  • 1/4 cup coconut oil, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions:

Warm the oven up to 400F 200C and put parchment paper on a baking sheet

Mix the flour, sugar, baking powder, and salt in a large bowl with a whisk

Mix in the vegan butter cubes that have been kept cold

You can use a pastry cutter or your hands to make the dough crumbly

Put in the vanilla extract and non-dairy milk, and mix them in until the dough comes together

Add vegan chocolate chips and mix well

Once the baking sheet is ready, put the dough on it and roll it out into a circle that is about an inch thick

Cut the dough into 8 wedges with a knife

Bake for 20 to 25 minutes, or until golden brown

Put the cinnamon powder and granulated sugar in a small bowl and mix them together

Brush the scones with melted coconut oil while they are still warm, and then sprinkle them with a lot of the cinnamon-sugar mix

Enjoy while still warm!
