Lemon Dill Potato Salad
Lemon Dill Potato Salad is a refreshing and tangy side dish that's perfect for picnics, barbecues, or any occasion. The combination of zesty lemon, aromatic dill, and creamy mayonnaise creates a delightful flavor that complements the tender potatoes.
Ingredients:
- 2 pounds potatoes, boiled and cubed
- 1/2 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh dill, chopped
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- Salt and pepper to taste
Instructions:
Put the chopped celery and red onion into a large bowl
Add the boiled and cubed potatoes and mix them together
Mix the mayonnaise, fresh lemon juice, Dijon mustard, and chopped dill in a different bowl using a whisk
Add the dressing to the potatoes and mix them together gently until they are well covered
Add pepper and salt to taste
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
If you want, you can add more dill on top before serving
