Raspberry Muffins A Taste of Madness



Enjoy the delicious taste of fresh raspberries and a hint of raspberry jam in these soft and moist muffins. This is a great breakfast or sweet snack.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh raspberries
  • 1/4 cup raspberry jam

Instructions:

Warm your oven up to 375 F 190 C and put paper liners in a muffin tin

Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl

Melt the butter and add the buttermilk, sour cream, egg, and vanilla extract

Mix the ingredients together well in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Do not mix too much

Be careful as you fold the fresh raspberries into the batter

Put half of the batter into each muffin cup

In the middle of each muffin cup, put one teaspoon of raspberry jam

Then, add more batter on top to cover

The muffins should be baked in a hot oven for 18 to 20 minutes, or until they are golden brown and a toothpick stuck in the middle comes out clean

Let the muffins cool for 5 minutes in the pan, then move them to a wire rack to cool all the way down
