Cauliflower Bacon Brie Soup
A rich and creamy soup featuring the earthy flavors of cauliflower, the savory crunch of bacon, and the luxurious creaminess of Brie cheese.
Ingredients:
- 1 cauliflower, chopped
- 6 slices bacon, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 6 oz Brie cheese, rind removed and chopped
- Salt and pepper to taste
- Chopped chives for garnish
Instructions:
Cook bacon in a big pot until it gets crispy
Take out the bacon and set it aside
Leave the fat in the pot
Put the garlic and onions in the pot and cook them until they get soft
Put in the chicken broth and cauliflower
Bring to a boil, then lower the heat and let it cook slowly until the cauliflower is soft
Blend the soup until it's smooth with an immersion blender
Until the cheese melts and the soup is smooth, add heavy cream and chopped Brie
Add pepper and salt to taste
Serve hot with chopped chives and crispy bacon on top
