Greek Chickpea Salad with Honey Lemon Dressing



The flavors of the Mediterranean come together in this Greek Chickpea Salad, which is both healthy and refreshing. It tastes sweet and sour, and goes well with the crunchy vegetables and creamy feta cheese. It's great as a side dish or by itself as a light meal.

Ingredients:

  • 2 cans chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • Salt and black pepper to taste

Instructions:

In a large mixing bowl, combine the chickpeas, cucumber, red bell pepper, red onion, cherry tomatoes, and Kalamata olives

In a separate small bowl, whisk together the honey lemon dressing ingredients, then pour it over the salad

Toss everything together until well combined

Gently fold in the crumbled feta cheese, fresh parsley, and mint leaves

Season with salt and black pepper to taste

Chill the salad in the refrigerator for about 30 minutes before serving
