Spiced MandM Toffee Cookies



Soft and spiced cookies loaded with crunchy bits of toffee, vegan chocolate chips, and colorful vegan M&M-style candies.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 flax egg 1 tablespoon ground flaxseed mixed with 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan toffee bits
  • 1/2 cup vegan chocolate chips or chunks
  • 1/2 cup vegan M&M-style candies

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a small bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt

In a large mixing bowl, cream together the vegan butter, brown sugar, and granulated sugar until smooth and creamy

Add the flax egg and vanilla extract to the wet mixture, and mix until well combined

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

Fold in the vegan toffee bits, chocolate chips, and vegan M&M-style candies until evenly distributed throughout the dough

Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
