Walnut Chickpea Burgers



These hearty walnut chickpea burgers are a great vegan meal choice because they are full of protein and flavor. Chickpeas and walnuts together make for a great texture, and spices and aromatics make the taste even better.

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 cup walnuts
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to form a gel-like consistency

In a food processor, combine chickpeas, walnuts, onion, garlic, cumin, paprika, salt, pepper, and the flaxseed mixture

Pulse until well combined but still slightly chunky

Form the mixture into burger patties

Heat olive oil in a skillet over medium heat

Cook the patties for 4-5 minutes on each side, or until golden brown and crispy

Serve the walnut chickpea burgers on buns with your favorite toppings
